Mexican Breakfast & Scanpan Giveaway!

Mexican BreakfastThis week I have been sent a new Scanpan lidded sauté pan to test out. Having loved their roasting pan so much, I was really quite excited to try it out!

On another note, the Mr absolutely loves Mexican cuisine and he found a fantastic one pot recipe from Jamie Oliver. Guess what? You need a lidded sauté pan to make it, it was meant to be!

So here is what you will need to serve 3 people:

  • 1 Small Onion, peeled & diced
  • 1 Garlic Clove, peeled & diced
  • 1 Red Pepper, deseeded & diced
  • 1 Red Chilli, deseeded & diced
  • 2 Fresh Bay Leaves
  • Salt & Pepper
  • 2 tbsp Olive Oil
  • 1 x 400g Tin Chopped Tomatoes
  • 2 Medium Tomatoes
  • 3 Eggs
  • 3 Tortilla Wraps, to serve *
  • Grated Cheddar Cheese, to serve

*For a gluten free version either serve on it’s own or use gluten free wraps.

Once you have prepped all your veg, heat a large frying/sauté pan over a medium heat. Make sure you have a lid for it.

Add the olive oil into the pan followed by the onion, garlic, red pepper & bay leaves. Season with a healthy amount of salt & pepper and cook for about 15 minutes until soft & golden.

Mexican BreakfastAdd in the chopped tomatoes & bring to the boil. Cook for about 5 minutes until the sauce starts to thicken.

Mexican BreakfastGive it a taste, if you think it needs it – add in some more salt & pepper.

Lay the sliced fresh tomato over the sauce. Then make 3 wells, drop an egg into each one & sprinkle with a little salt & pepper.

Mexican BreakfastPop the lid on & cook over a medium heat for about 4-5 minutes or until the eggs are cooked how you like.

Spoon into the tortilla wraps & get it down ya! This is a seriously delicious breakfast & so easy to make. I love that it hardly makes any pots too! Certainly makes a change from that boring bacon & egg cob. Yes, it’s a ‘cob’ where I come from! 😛

Scanpan Giveaway

Right, onto the Sauté Pan. A few things to note, the first being just how fantastic the quality is! There’s a reason this retails at £149, you really do get what you pay for. For starters, it’s nice & weighty but not too heavy to pick up, just the right balance. It’s safe for use on pretty much all hobs and it’s even oven & dishwasher proof. Making it really versatile in the kitchen & easy to clean. Not got a dishwasher? It’s still insanely easy to clean. Even the really tough crusty stuff just wipes straight off!

Also, because of the multi layered base (made from ceramic titanium, aluminium & other metals) it distributes heat really evenly and quickly. So you’re not stood there for ages waiting for the pan to heat up, nor do you get any uneven cooking.

And the non stick coating really is amazing. Not only making light of the cooking & the washing up, but you can even use metal utensils on it. Yeah, seriously. They literally won’t touch it it’s that good!

Another thing I noticed whilst using it is, due to the sides being quite high, it pretty much stopped all spatter from getting out the pan. I hate having to clean the hob every time I use it, and now I don’t have to! Brilliant.

Microwave Caramel Chocolate Brownie & Judge Giveaway!

Microwave Caramel Chocolate BrownieThe lovely people over at Judge have sent me some of their gorgeous double walled glasses to test out this week. There’s plenty of great features, but the best? They’re the perfect size for microwave mug cakes! Or in this case, a rich and gooey caramel choc chip brownie. I warn you though, approach this recipe with caution – it’s very dangerous for your waistline!

Here is what you will need to make 1 serving.

  • 2 tbsp (30g) Unsalted Butter
  • 2 tbsp Golden Caster Sugar
  • 1 tbsp Soft Light Brown Sugar
  • 1 tbsp Cocoa Powder
  • 1 Egg Yolk
  • 1/2 tsp Vanilla Extract
  • 4 tbsp Self Raising Flour
  • Pinch of Salt
  • 2 tbsp Milk Chocolate Chips
  • 2 tbsp Caramel (or Dulce De Leche)

Essential Equipment

  • 250ml Microwavable Mug or Glass

Place the butter in a small bowl & microwave for 20 seconds or so until melted.

Microwave Caramel Chocolate BrownieAdd in the caster sugar, brown sugar & cocoa powder. Mix with a fork until smooth & thoroughly combined.

Microwave Caramel Chocolate BrownieAdd in the egg yolk & vanilla extract and beat together.

Microwave Caramel Chocolate BrownieThen add in the flour & salt and again, beat until smooth & thoroughly combined.

Again, beat until smooth & thoroughly combined.Mix through half the chocolate chips (1 tbsp) then spoon half the mixture into your chosen mug or glass.

Top with half the caramel. (1 tbsp.)

Again, beat until smooth & thoroughly combined.Then add the remaining half of the brownie batter and top with the last 1 tbsp of caramel.

Again, beat until smooth & thoroughly combined.Place onto a plate and cook in the microwave using the following guidelines:

600W – 50 seconds

800W – 30 seconds

1000W – 25 seconds

Then top with the remaining 1 tbsp of chocolate chips & place back into the microwave for another 30 seconds.

You may need to do this in 10-15 second intervals to prevent it from spilling over the edges.

Again, beat until smooth & thoroughly combined.If you can handle it – leave to cool for 15-20 minutes. This allows it to become really nice and gooey in the middle but chewy round the edges. Worth the wait, trust me.

If you like, top with more caramel & dust with a little cocoa powder to finish. Or you can just devour it straight away!

Microwave Caramel Chocolate BrownieI have to admit, I’m very impressed with these Judge glasses. The double walled concept has quite a few benefits. For example, with hot contents, the heat stays trapped within the glass but the outside wall just stays warm to the touch. Great for handling & making it ideal for hot drinks or hot desserts like this microwave cake. Alternatively, with cold contents, you don’t get that annoying condensation dripping all over the place. Fantastic for those hot Summer days when you want an ice cold drink! They’re also microwave & dishwasher friendly which is ideal for the modern day family.

Pancake Day & a Judge Giveaway!

Pancakes/Crepes & a Judge Giveaway!

Ok, we’re a few weeks away from one of the best days in the foodie calendar – PANCAKE DAY! This week’s post is super exciting for 2 very good reasons. 1 – There is not just one, but TWO awesome pancake filling recipes to wet your whistle. And 2 – I have teamed up with Judge Cookware to give you lucky lovelies the chance to win every tool you will need to make the perfect pancakes on the day!

Sounds good right? RIGHT! Well let’s get cracking then. Here is what you will need to make the most epic pancakes in the world! (In my opinion obviously…)

For the Pancake Batter

(Makes approx 8 x 17cm Diameter)

  • 100g Plain Flour
  • Pinch of Salt
  • 1 Egg
  • 250ml Semi Skimmed Milk
  • Butter (for cooking fat)

For the Bacon, Cheese & Chive Filling

(Enough for 4 Generously Filled Pancakes)

  • 150ml Double Cream
  • 90g Cream Cheese
  • 4-5 Slice of cooked Smokey Bacon, chopped
  • Fresh Chives, chopped

For the Strawberries & Cream Filling

(Enough for 4 Generously Filled Pancakes)

  • 150ml Double Cream
  • 1 tbsp Icing Sugar
  • 227g Punnet of Strawberries
  • Juice of 1/2 Lemon
  • Melted Belgian Chocolate/Icing Sugar, to serve (Optional)

 

Let’s start with the basic pancakes.

Sieve the flour into a large bowl and mix in the salt.

Make a well in the centre and crack in the egg.

PancakesMix with a whisk and gradually add in the milk. Keep mixing until all the milk has been used and there are no lumps. It should be the consistency of single cream.

PancakesPour the batter into a jug ready for cooking. (This makes it WAY easier to pour into the pan.)

Heat a non stick frying pan over a medium heat.

Add in a little butter and allow to melt around the pan. Pour enough batter to cover the bottom, then swill the pan round quickly to even it out.

PancakesAfter a couple of minutes, ‘shake’ the pan to loosen the pancake and lift an edge to see if it’s nice and golden.

If it is, you can either be brave and flip it – or a total wuss like me & use a spatula!

PancakesAllow to cook for another couple of minutes until the other side is nice and golden too. Then either keep warm in some foil or eat straight away with your choice of filling.

Repeat the process until all the batter is used up.

PancakesSpeaking of fillings…

Bacon, Cheese & Chive Filling

Whip the double cream in a large bowl to almost stiff peaks then beat in the cream cheese. Add a little salt for seasoning if you like.

Top Tip! Over whipped the cream so it’s gone grainy? Just add in a little milk and fold through to bring it back.

Divide between your pancakes and top with the chopped bacon & chives.

Strawberries & Cream Filling

Whip the double cream to stiff peaks in a large bowl. Then sift in the flour and gently fold through.

Top Tip! Over whipped the cream so it’s gone grainy? Just add in a little milk and fold through to bring it back.

Hull & slice the strawberries and place in a bowl. Squeeze over the lemon juice & give it a good stir.

Divide the sweetened cream between your pancakes and top with plenty of strawberries.

If you like, you could drizzle over some melted Belgian chocolate & dust with a little icing sugar for a really decadent finish.

PancakesSEE! I told you they were the most epic pancake recipes in the world! Just wait until you try them, oh my word… you won’t look back I promise.

Judge Pancake CompetitionNow, onto the equipment. I’ve gotta’ say – I’m impressed and I think you will be too!

The scales are very lightweight & really slim so take up next to no room in your precious kitchen cupboards. They’re also very accurate – exactly what you want in a set of digital scales.

The mixing bowl is also great. It’s nice and tall meaning you won’t splash your batter all over the place when using the balloon whisk. It’s lightweight too so easy on the wrists – giving you more elbow grease to work that whisk!

The glass jug does exactly what it says on the tin. With the measurements clearly visible on both sides & a comfortable handle, it’s a staple addition to any kitchen.

As for the frying pan and turner (spatula) – these two make very light work of pancake making! The non-stick coating on the pan is absolutely brilliant – not one single pancake stuck. The curved bottom shape also makes it perfect for pancakes allowing you to freely & easily move them without anything getting stuck in edges. The turner was the surprise win for me. It’s heat-resistant nylon end won’t damage the non-stick coating in the pan and it’s literally the perfect shape & size for flipping your pancakes. I will be using these two tools every Shrove Tuesday!

Ultimate Roast Veg & Scanpan Giveaway!

Ultimate Roast Veg & Scanpan GiveawayWe’re into December now and there’s only one thing on everyone’s mind – Christmas. I’m here to help make it a little easier on you with my super simple & intensely delicious ultimate roast veg recipe. Not only that, but you could bag yourself literally the greatest roasting pan I have ever used! Competition details at the end of the post.

Here is what you will need to serve 3-4 as a side dish.

  • 350g Baby Potatoes, quartered
  • 2 – 3 Large Carrots, peeled & sliced
  • 2 – 3 Large Parsnips, peeled & sliced
  • 1 tsp Garlic Powder
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 2 tbsp Olive Oil
  • Salt & Pepper
  • Fresh Parsley, to garnish (Optional)

Preheat your oven to 200°C/Fan 180°C.

Quarter the baby potatoes (they should be roughly 3cm in diameter) then peel the carrots & parsnips.

Slice the carrots & parsnips to approx the same size as the potatoes – this will ensure it all cooks evenly.

Then throw it all into a good quality roasting pan along with the garlic powder, oregano, thyme, olive oil & a generous helping of salt & pepper.

Get your hands in and mix it all together so everything is evenly coated.

I gave mine a mix half way through the cooking time.

This really is a kitchen must have and completely obliterates all the other roasting pans I have ever used!

The ceramic titanium non stick coating is really something to shout about too. I mean, nothing is going to stick to this baby – NOTHING! Every time I’ve roasted veg in a roasting pan, something has always stuck to the bottom and it’s a nightmare to clean. With this? No chance! Everything wiped straight off. It was like you hadn’t cooked anything in it in the first place.

Another thing I noticed when making this recipe was how evenly everything cooked. They claim the roasting pans have fast & even heat distribution and I totally agree! Fantastic stuff.

Spaghetti Bolognese & SORTEDfood Giveaway!

Spaghetti BologneseSpaghetti bolognese. We all love it but lets be honest, 9 times out of 10 – it comes out of a jar. And I must confess, I’m guilty too. So I went on a mission to find an easy solution, and there was only one place to look, SORTED food!

Over the years they have built up a HUGE recipe archive, a fantastically funny yet informative, step-by-step YouTube channel and even have their own kitchenware! So there was no question they would have an easy peasy & super delicious recipe for spag bol.

Without further ado, here is what you will need to serve 4.

  • 500g Minced Beef
  • Olive Oil, for frying
  • 1 Onion
  • 1 Stick Celery
  • 1 Carrot
  • Handful of Mushrooms
  • 2 Garlic Cloves
  • 1 tsp Dried Oregano
  • Squeeze of Tomato Puree
  • 1 Glass of Red Wine
  • 1 x 400g Tin of Chopped Tomatoes
  • 400ml Beef Stock
  • Splash of Milk
  • Splash of Worcester Sauce
  • 400g Spaghetti
  • 80g Parmesan Cheese to serve, Grated

Firstly, prepare your vegetables. Finely dice the onion, celery & carrot. Chop the mushrooms and crush the garlic.

Next, heat a large frying pan over a medium heat and  season the beef with salt and pepper. (Before it goes in the pan.)

Add a little olive oil to the pan then fry the mince until browned. Transfer to a bowl and set to one side.

Spaghetti BologneseAdd the onion, celery, carrot & mushrooms to the same pan and fry for a few minutes.

Spaghetti BologneseThen add in the garlic, oregano, tomato puree and red wine. Stir to mix well and simmer for a few minutes to reduce.

Spaghetti BologneseNext, add in the chopped tomatoes, beef stock, milk and worcester sauce. Return the mince to the pan, season generously with salt & pepper and simmer over a low heat for a minimum of 1 hour – a few is better.

Spaghetti BologneseWhen you are ready, cook the pasta in generously salted water according to the packet instructions.

Spaghetti BologneseDrain, toss with a little olive oil and season with salt & pepper.

Spaghetti BologneseServe with a big dollop of bolognese and some grated parmesan.

Spaghetti BologneseAnd there you have it! Time, it would seem, does most of the hard work for you in this recipe. It’s not demanding in any way, in fact other than 10 minutes to get it going and cooking pasta at the end, it’s really not that taxing at all! And as for the taste? It’s gorgeous. The red wine adds a deep rich flavour to it and all that (now hidden) veg is great for you and your family! It’s a really good way to get some of the good stuff into those fussy eaters. (Trust me, I was one for years.)

This really is good! It goes completely flat for easy storage & simply pops up when you need to use it. It is great for draining pasta, potatoes or rice & works perfectly as an easy vegetable steamer by simply placing it into a pan, filling with water up to the base of the steamer and hey presto! Pop the lid on the pan – vegetable steamer.

Judge Fro Fru & Giveaway!

Judge Fro FruOk, this thing is amazing! A great new gadget from Judge Cookware that turns frozen fruit into an instant and healthy dessert. It’s a fantastically fun way to get some much needed vitamins into fussy eaters like me, children, or, well – anyone!

You can already buy a good assortment of frozen fruits from the supermarkets but if you don’t find what you’re looking for – it’s really simple to make your own.

Me and the Mr had a go ourselves…

Judge Fro FruThe Mr wanted banana so all I had to do was peel and chop 3 bananas and seal them in a freezer bag. (This is enough to make 2 – 3 generous portions.)

Me? I wanted strawberries so I hulled and sliced a 400g punnet of strawberries and sealed in a freezer bag. (Also enough to make 2 – 3 generous portions.)

Another great thing is you can add whatever dairy you like too. Then it occurred to me – strawberries and cream! So I poured some single cream into an ice cube tray and placed into the freezer along with the 2 bags of fruit. Allowing them a minimum of 24 hours in there before use.

And that is literally all the hard work done! All that’s left to do is run the frozen fruits/cream through the Fro Fru.

Judge Fro FruIt’s really easy to use and it literally makes INSTANT sorbet like desserts!

Judge Fro FruIt’s so healthy for you too. The only ingredients are the fruits you put through it. Well – until you add a big dollop of Nutella like the Mr did…

Judge Fro FruI must say, I really enjoyed my ‘Strawberries & Cream’ version… it was absolutely delicious! Very refreshing in this muggy, humid weather we’ve been having.

Judge Fro FruOne final thing to note (and a very important thing in my opinion) is how unbelievably easy it is to clean! It’s just three, easily detachable parts to rinse and that’s it. Even the Mr was surprised about that as it usually puts us off making something if we know the pots are going to be a nightmare. Definitely a winner in the KitchenMason household!
