Thanks to the Mr – one of the many cookbooks I got this Christmas was the Beginners Get Sorted book by the guys over at Sorted Food. (They are amazing by the way – you should go and check them out here!)
Thought I would have a crack at one of their awesomely simple and delicious recipes. Here is what you will need to serve 2 people (easily doubled or even tripled!)
- 200g New Potatoes
- Olive Oil
- Oregano (dried or fresh)
- 2 Chicken Breasts
- Juice of 1/2 Lemon
- Mixed Leaf Salad to serve
- Wooden OR Metal Skewers
Preheat your oven to 210°C/Fan 200°C and if you are using wooden skewers – soak them in water for at least 30 minutes. (This will stop them from burning in the oven.)
Put the new potatoes on a baking tray and drizzle with a little olive oil. Sprinkle with salt, pepper and some oregano then mix until evenly coated. Place them into the preheated oven for about 40 minutes.
Meanwhile, in a bowl (large enough to take the chicken) pour 2-3 tbsp of olive oil and add in the lemon juice. Sprinkle in some salt & some paprika then whisk until combined well. Remember to taste it! If necessary, add more salt and/or paprika to your liking.
Serve alongside the roasted new potatoes and a salad of your choosing. (I used a bag of mixed leaves & some cherry tomatoes with a caesar dressing.)
And there you have it! Paprika chicken skewers with roast new potatoes. It’s unbelievably simple to make and really really tasty! Those guys over at Sorted Food really know how to make simple, great! By the way, they also have a YouTube channel which they update daily with recipes ranging from hearty & healthy all the way to decadently indulgent. They honestly make cooking fun so you should go and have a nosy : )
But if you’re looking for a way to ease yourself back into healthy food for the new year then this is a great one to start with.
