My parents keep telling me that I should put a recipe up that involves vegetables. Here you go Mum & Dad, this one is just for you : D
It’s from a lovely little book I’ve had for a while. Carbonara, Marinara, Napolitana: A Cook’s Book of Pasta. This is what you will need to serve 4:
- 375g Spaghetti or Linguine
- 125g Slightly Stale Bread
- 100ml Extra Virgin Olive Oil
- 4 Garlic Cloves, finely chopped
- 400g Baby Spinach Leaves
- 25g Parsley, chopped
- 4 tbsp Basil, chopped
- 1 tbsp Thyme leaves
- Parmesan, to serve (Optional)
Cook the pasta according to packet instructions and keep warm in the pan until needed. Keep a little of the water.
Put the stale bread into a food processor/blender and pulse until coarse breadcrumbs are formed.
Heat 1 tbsp of oil in a frying pan then add the breadcrumbs and half the garlic. Toss until lightly golden and remove from the pan.
Heat 2 tbsp of oil in the same pan and add the spinach & remaining garlic. Cook until slightly wilted then add the herbs. Cook for 1-2 minutes.
Add the pasta, the reserved pasta water & the rest of the oil to the pan then mix & warm through.
Serve scattered with the garlic breadcrumbs & add a sprinkling of parmesan if you like.
I must admit it felt like something was missing for me. However, I can’t deny that it was still very tasty & it served the important purpose of getting some veg inside me!
