Me and the Mr are thinking of going on holiday to Thailand this year. I have had a Thai cookbook for ages and never cooked anything out of it. I felt inspired to try one of it’s many recipes and came up trumps with this beaut! Here is what you need to recreate this super tasty, super easy meal.
Serves 2 (easily doubled)
- 1 Garlic Clove, finely chopped
- 1 Shallot, finely chopped
- 1″ Piece of Fresh Ginger, finely chopped
- 2 Large Tomatoes, chopped
- 1 1/2 tbsp Fresh Coriander, chopped
- 250g Pork Mince
- 1 tbsp Thai Fish Sauce
- 1/2 tbsp Dark Soy Sauce
- 1/2 tbsp Thai Red Curry Paste
- 2 Dried Kaffir Lime Leaves
- Egg noodles, to serve
Heat a little oil in a non stick frying pan and add the garlic, shallot & ginger. Fry for about 2 mins then add the pork mince and fry until cooked through.
Add the fish sauce, dark soy, curry paste & kaffir lime leaves and stir through. Allow to fry for about 2 minutes.
Add the chopped tomatoes and cook for about 5-10 minutes.
Then stir through the chopped coriander and remove the kaffir lime leaves.
Serve up with some freshly cooked egg noodles and commence stuffing your face!
This one even got the approval of the other half, will definitely be making this baby again. Yum!
