Healthy (Ish!) Oven Chips!

Today me and the other half had planned on having steak and chips for tea. Normally I would make home made chips by first frying them in a wok filled with hot oil, then putting them on a baking tray in a 180°C oven for 15-20mins, then back into the wok for a final crisping. Only thing is… I just cleaned the shit out of my kitchen and I’m not chuffed about the idea of replacing that fresh, clean smell with a fatty, greasy smell! So I think to myself, why don’t I just try and make home made oven chips?

Here is what I decided to do.

Serves 2

  • 2 Jacket Potatoes
  • 2 tbsp Olive Oil
  • Salt
  • 1 tsp Garlic Granules
  • Fresh or Dried Parsley
  • Balsamic Vinegar

Preheat your oven to 200°C (If your oven is not a fan oven, go to about 220°C)

Chop the spuds into big wedges and plonk them in a bowl. Pour over the olive oil, some salt & the garlic granules. Get your hands messy and mix them all up until evenly coated.

Put them on a baking tray so they all lay flat and in a single layer. Pop them in the oven for about 30-40 minutes turning once half way.

Remove them from the oven, sprinkle on some balsamic vinegar & some parsley to taste and commence eating!

These were real tasty and went rather well with our steaks and blue cheese & onion sauce! You could really play around with the flavours & seasoning on these too.
